Soft Mashed potatoes with caramelized onions (For 8-10 persons)
Ingredients
2kg of potatoes
2L of water
600g of onions
1 tablespoon of sugar (for caramelizing the onions)
1.5 tablespoon of salt (for cooking potatoes)
2.5 tablespoon of sugar (for cooking potatoes)
1 tablespoon of olive oil
Salt to season
1 Philadelphia cheese in light or normal version
6 branches of thyme
250ml of semi-skimmed milk (optional)
5 cloves of garlic (for cooking potatoes)
30g of bread or biscuit crumbs
20g grated cheese (any of your preference)
Procedure
Step 1: In a large pan, add about 2L of water with 1.5 tablespoons of salt and 2.5 tablespoons of sugar and allow to cook on a medium to high heat.
Step 2: While waiting for you water to boil, peel, wash and cut your potatoes into thin slices
Step 3: Grate your cloves of garlic and as soon as your water starts to boil, add the garlic followed by your potato slices
Step 4: While your potatoes are cooking, add your onions (circularly cut), olive oil, a tablespoon of sugar and 2 small pinches of salt and on low heat, allow your onions to caramelize
Step 5: When your potatoes are cooked (brochette pick easily penetrates), transfer them in a colander to remove the water. Do Not wash them.
Step 6: Return your potatoes back to the recipient in which they were cooking and add your cheese together with your milk (milk is optional)
Step 7: Using your hand mixer, mix mix mix until you obtain a very smooth and creamy potato paste
Step 8: At this time, your onions must have already caramelized (soft and golden colour). Spread a small amount at the base of your baking dish.
Step 9: Spread a layer of your potato mixture on top of the caramelized onions then again spread another layer of caramelized onions.
Step 10: Add some thyme leaves as well
Step 11: Repeat step 8-9-10 again until you obtain the final mounting with order (starting from below): Caramelized onions - Potato mixture - Caramelized onion/ thyme leaves - Potato mixture. Then put your baking dish in the oven for 20 minutes in the "Grilled setting" at 200 degrees Celsius. Do not forget to keep some caramelized onions for final topping .
Step 12: After 20 minutes under grilled (golden/brown top surface), spread some biscuit/bread crumbs.
Step 13: Add your remaining caramelized onions as well
Step 14: Finally add some grated cheese on top and allow to cook at 175 degrees Celsius in oven still using "grilled setting" for 10-15 minutes or until golden brown. Note: Instead of using one large baking dish, you may also do individual portions .. Here I did both..
