Granola Muffins

Granola Muffins (For 9 jumbo size muffins or about 15 medium size cupcakes)

For the muffins

200g of pastry flour

8g of baking powder

5g (1tsp) of cardamom powder (Elaiti)

2g salt

Zest from 1 lemon or orange (optional)

200g of unsweetened Granola (+100g for final topping)

170g of brown sugar (if using sweetened Granola, use only 110g of brown sugar - refer to photo below)

2 eggs

50ml of milk

140g of melted butter

10ml of vanilla essence

9 tulip muffin liners (you may use cupcake liners as well)



Procedure

Step 1: In a bowl, add flour, Granola (200g), salt, baking powder, orange or lemon zest, cardamom powder and mix all together (dry ingredients mixture).

Step 2: Add your melted butter to your sugar and mix (sugar-butter mixture).

Step 3 : Beat your eggs together with your vanilla and milk (wet ingredients mixture).

Step 4: Add your dry ingredients mixture, followed by your wet ingredients mixture to your sugar-butter mixture !

Step 5: Give them a quick mix (I use my hand whisk) just until combined.

Tip: It is very important not to overmix any cake batter (unless you are doing a sponge cake ) including muffins firstly to avoid adding too much air into the batter which would cause large cracks to form when baking and secondly to avoid activating/ creating too much gluten which would cause your muffins to have a rubbery texture instead of a soft and crumbly texture !..

Step 6: Your Granola muffin batter is now ready !.. Fill your liners (75%) accordingly !

Step 7: Sprinkle some granola on top of each of your muffins!

Step 8: Then bake your muffins in a preheated oven at 180 degrees Celsius for 25 minutes or until a skewer comes out clean when inserted in the center of any muffin ...

Step 9: Your Granola muffins are ready !..


Step 10: Enjoy when still warm
