Chicken with Eggplant (For 4 persons)
2 Large eggplant
2 medium size tomato
400g of chicken breast
Salt and pepper to season
1 tablespoon of olive oil
1 teaspoon of sugar
1 large onion
1 teaspoon of corn flour diluted in a small amount of water
1 jalapenos
4 cloves of garlic
4 branches of thyme
4 branches of Parsley
30g grated cheese (any of your preference)
Procedure
Step 1: Cut your eggplant into circular slices of about 1cm depth
Step 2: Allow your eggplant slices to soak in salted water for about 20 minutes (meanwhile proceed with step 3 )
Step 3: In your pan, add your thinly chopped onions, garlic, olive oil, sugar, 2 pinches of salt and 2 pinches of pepper
Step 4: When your onions have become soft and almost translucent, add in your thinly chopped chicken as well as your thinly chopped tomatoes with 2 more pinches of salt and pepper
Step 5: While your chicken is still cooking and after 20 minutes (from step 2), wash superficially your eggplant slices and place them on your baking tray over a baking sheet and allow them to soften in a preheated oven at 200 degrees Celsius for 15 minutes
Step 6: While your eggplant slices are in the oven and as soon as your chicken is cooked (opaque white) and tomatoes has almost liquified (mixture is boiling as well), add in your corn flour diluted in a small amount of water and mix well (this will help the mixture to be more consistent in terms of viscosity ...)
Step 7: Switch off the heat and add in your thyme leaves, thinly chopped parsley and thinly sliced jalapenos (If you like it hot, do not remove the seeds, if you like it mild, remove half of the seeds, else remove all the seeds .. )
Step 8: Time for "Mounting" !... Get out your eggplant slices from the oven. In your baking dish, spread a layer of your tomato/chicken mixture
Step 9: Then place a layer of your eggplant slices, followed by another layer of tomato/chicken mixture topped with some grated cheese.
Step 10: Repeat processes from step 8 and 9 until you obtain your final "mounting" in the order (starting from below): tomato/chicken - eggplant slices - tomato/chicken - grated cheese - eggplant slices - tomato/chicken - grated cheese
Step 11: Allow to cook in a preheated oven at 180 degrees Celsius for 30 minutes
Step 12: Out of oven - Hot hot hot
