For the gingerbread cookie dough
450g multi-purpose flour
220g butter/margarine
220g Brown Sugar (Use only between 150g to 180g if you prefer less sweet cookies)
10g cinnamon powder
3g ginger powder
5g salt
15ml vanilla extract
Procedure
Step 1: Mix butter/margarine, flour, sugar, cinnamon powder, ginger powder and salt until a uniform brown color is obtained.
Step 2: Add the vanilla then mix/ knead until you obtain a consistent non sticky dough (you can mix with your hand or an electric mixer using the 'dough hook' accessory)
Tip: Depending on the temperature and/or humidity level in your environment, if your final dough obtained from step 2 is a bit sticky, add some more flour (10 g each time). If on the contrary it is dry and grainy, add some milk or water (10 ml each time)...
Step 3: Use the Gingerbread House Template provided (See link below) to cut your different shapes (thickness should be approximately 8mm). Bake at 175 degrees Celsius (in a preheated oven) for 15 minutes or until your cookie dough starts to deepen in color (especially at the base).
Step 4: Use crushed candies if you want to add glasses to the windows (refer making-of!).
Step 5: Bake, decorate and most importantly, Have fun!!!

For decoration
Use All of your favorite sweets (Marshmallows/ Smarties/ M&Ms etc...) !!! Be creative ! there are no rules really for decorating your gingerbread house..
For the 'Glue' you can use 1 or all of the following:
Marzipan (Almond paste)
Sugar paste (Rs175 at Intermart (NJC or Vahiné brand))
Royal icing (check recipe from my 'Gateau Napolitaine' recipe. Remember that depending on the temperature and/or humidity level in your environment, if your royal icing obtained is a bit too thick, add some more water (2-3ml each time). If on the contrary it is too runny, add some more icing sugar (~5g each time)...
Download the gingerbread house template (in PDF) then print - laminate (optional) and Bake !!!
